No Bake Energy Balls
A quick and delicious solution for an afternoon pick me up! These energy balls are made with wholesome ingredients, and can be made in just 5 minutes!

Ingredients
½
cup
old fashioned rolled oats
¼
cup
almond meal
¼
cup
unsweetened shredded coconut
½
cup
medjool dates,
pitted & soaked for a few minutes
2
tbsp
nut butter
1
tsp
vanilla extract
pinch of salt
Other optional mix ins: chocolate chips, chia seeds, flax seeds, pure maple syrup for more sweetness, nuts, etc.
Instructions
Process rolled oats in a food processor until it resembles a fine flour.
Add in the rest of the ingredients and pulse until the mixture forms a dough. If using other mix ins, fold in now.
Shape in rounded tablespoons. If desired, dust in cacao powder, matcha powder, shredded coconut, crushed nuts, etc.
Store in fridge for up to 2 weeks, or longer in freezer.
Notes
These energy balls are freezer friendly and can keep well in the freezer for up to 6 months.
