Crispy Baked Purple Potato Chips
Who needs store-bought potato chips when you can make a healthier version at home! These baked potato chips are so simple to make, farali friendly, and delicious!

- 2 purple potatoes or yukon
- 1 tbsp olive oil
- sea salt to taste
Preheat oven to 400F. Line two large baking trays with parchment paper.
Wash and scrub potatoes. Dry with paper towels.
Using a mandolin or a very sharp knife, slice potatoes into 1/8th inch thin slices.
In a bowl, toss the potato slices with olive oil and lightly season with salt.
Arrange the slices on the prepared baking trays, and bake for 10 minutes. Flip the potato slices, and then bake for another 5 minutes or until chips are crispy.
Immediately salt the chips with more salt per taste.
Be sure to keep an eye on the chips towards the end of the baking time to avoid overcooking/ burning. Remove any chips that seem crispy and ready!
You can also try different seasonings as desired:
- cayenne
- paprika
- rosemary
- salt + pepper
