No Bake Energy Balls
A quick and delicious solution for an afternoon pick me up! These energy balls are made with wholesome ingredients, and can be made in just 5 minutes!
Servings: 16 balls
Ingredients
- ½ cup old fashioned rolled oats
- ¼ cup almond meal
- ¼ cup unsweetened shredded coconut
- ½ cup medjool dates, pitted & soaked for a few minutes
- 2 tbsp nut butter
- 1 tsp vanilla extract
- pinch of salt
- Other optional mix ins: chocolate chips, chia seeds, flax seeds, pure maple syrup for more sweetness, nuts, etc.
Instructions
- Process rolled oats in a food processor until it resembles a fine flour.
- Add in the rest of the ingredients and pulse until the mixture forms a dough. If using other mix ins, fold in now.
- Shape in rounded tablespoons. If desired, dust in cacao powder, matcha powder, shredded coconut, crushed nuts, etc.
- Store in fridge for up to 2 weeks, or longer in freezer.
Notes
These energy balls are freezer friendly and can keep well in the freezer for up to 6 months.
