Ingredients

  • 2 purple potatoes or yukon
  • 1 tbsp olive oil
  • sea salt to taste

Instructions

  • Preheat oven to 400F. Line two large baking trays with parchment paper.
  • Wash and scrub potatoes. Dry with paper towels.
  • Using a mandolin or a very sharp knife, slice potatoes into 1/8th inch thin slices.
  • In a bowl, toss the potato slices with olive oil and lightly season with salt.
  • Arrange the slices on the prepared baking trays, and bake for 10 minutes. Flip the potato slices, and then bake for another 5 minutes or until chips are crispy.
  • Immediately salt the chips with more salt per taste.

Notes

Be sure to keep an eye on the chips towards the end of the baking time to avoid overcooking/ burning. Remove any chips that seem crispy and ready!
You can also try different seasonings as desired:
  • cayenne
  • paprika
  • rosemary
  • salt + pepper
