Vegan Parmesan Ingredients
Raw Cashews: When grinded down to a fine powder, cashews take on a “melt in your mouth” texture that mimics real parmesan cheese. And I promise, you won’t feel like you’re eating cashews on top of your pizza.
Nutritional Yeast: Nutritional yeast adds a subtle “cheesiness” flavor to vegan parmesan. Plus, Vitamin B12 y’all!
Salt: Salt is essential to enhance and deepen the flavor of this vegan parmesan cheese.
Mushroom Powder: MY SECRET WEAPON! Parmesan cheese is naturally rich with umami flavor, and mushroom powder is the perfect addition to create those savory tones that we all love. Takii Umami Powder is what I use.
Tips for making Vegan Parmesan Cheese:
- Say it with me: Pulse, do not blend! You want to pulse only until the mixture starts to resemble a fine powder. If you overdo it, the cashews may turn into a paste. And we aren’t tryna make cashew butter, friends!
- If you have a nut allergy, you can try substituting the cashews with hemp seeds. I personally have yet to try this version with this recipe, so I cannot guarantee the same results.
- If you do not want to purchase mushroom powder, you can make it at home! All you need is dried porcini mushrooms and a food processor. Then, you just pulse until the mushrooms break down into a fine powder.
Vegan Parmesan Cheese
Ingredients
- 1/2 cup raw cashews
- 2 tbsp nutritional yeast
- 1/2 tsp sea salt
- 1/4 tsp mushroom powder see note
Instructions
- Add all ingredients to a food processor, and pulse until mixture resembles a fine powder.
- Store in an airtight container in the refrigerator.
